PESCADO EN ESCABECHE 
SAUCE:

2 c. olive oil
1 c. vinegar
12 whole grains black pepper
1/2 spoon salt
2 basil leaves
1 1/2 lbs. onion, cut in large pieces

FISH:

3 lbs. fish in round portions
1 big lemon
4 1/2 sm. spoons salt
1/4 c. flour
1 c. olive oil
2 sm. pieces garlic

Prepare the sauce, combining in a big casserole all the ingredients and let it cook in low heat for about an hour.

Wash and dry fish; put a little bit of lemon juice over it. Add salt and pat in flour on both sides of the fish before it is put to fry. After the fish is cooked to a golden color, remove and put in crystal bowl.
