PORC EN BROCHETTE 
3 lb. pork tenderloin, trimmed and cut into 1 inch cubes
1 clove garlic, minced
1/2 med. onion, minced
1/8 tsp. crushed red pepper
1 1/2 tsp. minced parsley
4 tbsp. brown sugar
3 tbsp. lemon juice
1/2 tsp. black pepper
1/4 c. soy sauce
1/3 c. olive oil
Whole small mushrooms
Wedges of golden, red or green peppers

Puree in cuisinart (steel blade) or blender. Marinade ingredients: garlic, onion, red pepper, parsley, sugar, lemon juice, pepper, soy sauce and olive oil. Pour over pork and marinate several hours with mushrooms. Thread pork, mushrooms, peppers alternately on skewers. Place over hot coals on grill and cook 6 to 8 minutes per side. Also good with shrimp on skewers. Do not marinate shrimp over 2 to 3 hours and cook over coals 2 to 3 minutes, per side. Serves 4 to 6.
