GLAZED CARROTS 
Cook 3 to 4 carrots, cut crosswise in 1 inch pieces. Add 1 1/2 tablespoons butter, 1/3 cup packed brown sugar, grated lemon rind and lemon juice to taste. Heat slowly, stirring occasionally until glazed, about 10-15 minutes. Makes about 2-3 servings. For larger families, just double recipe.
