DOUBLE BANANA SALAD | |
This creamy dressing makes excellent use of very ripe bananas. 1 ripe medium banana, cut up 1/4 c. salad oil 1 tbsp. vinegar 1 tbsp. lemon juice 1 tbsp. sugar 6 c. torn romaine lettuce 1 (8 oz.) can pineapple chunks, drained 1 medium banana, sliced 1 c. sliced fresh strawberries 1/4 c. peanuts In blender container combine the first banana, oil, vinegar, lemon juice, sugar and dash salt. Cover; blend till smooth. Transfer mixture to a screw-top jar; cover and chill. In a salad bowl combine the romaine, pineapple, banana, and strawberries. Shake salad dressing; pour over salad. Toss.
