CARROT COOKIES 
1 c. flour
1/4 tsp. baking powder
1/4 tsp. baking soda
1/2 c. butter
1/2 c. sugar
1/2 c. firmly packed light brown sugar
1/2 tsp. vanilla extract
1 egg
1/2 c. finely grated carrots (DON'T pack em down)
1 c. oats, uncooked
1/2 c. flaked coconut
3/4 c. chopped walnuts

Preheat oven to 350 degrees. Grease 2 large cookie sheets. In medium bowl, combine flour, baking powder and baking soda. In mixer bowl, cream butter, sugars and vanilla; beat in egg. Gradually stir in flour mixture, then oats, carrots, coconut and walnuts. Drop by rounded teaspoonfuls a few inches apart on cookie sheets. Bake 12 to 15 minutes.
