BLACK BOTTOM CUPCAKES 
CAKE:

3 c. flour
1 tsp. salt
2 c. sugar
1/2 c. cocoa
2 tsp. baking soda
2 c. water
2 tbsp. vinegar
2 tsp. vanilla
3/4 c. oil

FILLING:

1/3 c. sugar
1/4 tsp. salt
1 egg
8 oz. cream cheese
6 oz. chocolate chips

Mix cake ingredients in bowl. Pour into cupcake liners. Fill half full. Mix filling ingredients except chocolate chips. Whip until fluffy, then add chocolate chips. Spoon a heaping teaspoon of filling into center of each cupcake. Bake at 350 degrees for 25 minutes. Store in refrigerator or freezer.

OPTIONAL: Frost with chocolate frosting.
