DAIRY FREE PEANUT BUTTER FUDGE

This is as close as I have ever tasted to real cream fudge. It's very smooth and just right on peanut butter. I was in need of fudge over the holidays and I can't eat dairy anymore because I'm allergic. I tried several recipes until I came up with this one on my own. AND the best part is that it is so easy! I'll bet that if you serve it, no one will know it's Dairy Free!

4 cups granulated sugar
1 cup Silk Original Almondmilk
2 tsp. vanilla (pure is best)
2 cups peanut butter (buy a name brand!)
1 tbsp. Earth Balance original butter

Mix the sugar and Silk in a large sauce pan. The Silk causes a lot of bubbles so you need a larger pan.

Boil medium-high just before soft ball stage (I go by the candy thermometer, and I remove them at about 240°F rather than wait to the soft ball at 250°F due to the temperature difference in the Silk).

Take off the stove add the vanilla, peanut butter, and butter, mix well (use a whisk) until smooth. I prefer to spray a 9x13-inch pan with non stick oil and then pour in the batter. place covered in fridge to cool quicker.

When completely cooled, cut into squares. Thoroughly enjoy!

Makes 30 pieces of fudge or more according to cut size; 25 minutes (20 minutes prep).

Note: I have used Silk original lite and it turned out good as well, just a little more dry.
