OAT BRAN MUFFINS 
2 1/4 c. oat bran cereal
1/4 c. brown sugar (or white)
1/4 c. honey (or your favorite syrup)
2 egg whites
1 ripe banana, well mashed
1 tbsp. oil
1 c. skim milk
1 c. fruit or nuts of your choice
2 tbsp. baking powder

Add mashed bananas to egg whites and oil. Stir in sugar, honey, and milk. Add the oat bran and baking powder. Mix well. Stir in fruit or nuts. Pour into muffin pan and bake at 375 degrees until done about 15-20 minutes. Once the muffins have cooled store in refrigerator so they won't spoil so fast.
