APPLE-LEMON CHESS PIE 
1 c. sugar
1/2 tsp. salt
1/2 tsp. grated lemon rind
4 eggs, beaten
3 tbsp. lemon juice
1/4 c. butter, melted
1 c. unsweetened applesauce
1 unbaked 9" pastry shell

Combine sugar, salt and lemon rind; set aside. Combine eggs, lemon juice, butter and applesauce. Add dry ingredients and beat with an electric mixer until mixture is blended. Pour into unbaked pastry shell; bake at 450 degrees for 15 minutes. Reduce heat to 350 degrees, bake an additional 15 minutes or until set. Cool on a wire rack.
