BAKED ASPARAGUS 
1 lb. fresh asparagus
3 tbsp. butter
1/2 onion, chopped
1 rib celery, chopped
2 tbsp. parsley, chopped
1 tbsp. chives, chopped (optional)
2 tbsp. grated Parmesan cheese
2 tbsp. fresh bread crumbs
4 tomatoes, peeled, seeded and diced
Pinch of oregano
Pinch of thyme
Salt and pepper to taste

Wash asparagus well. Melt butter in baking dish and line the bottom of dish with asparagus spears. Sprinkle the remaining ingredients over asparagus and bake at 375 degrees for 45 minutes.
