CARROT PENNIES DIABETIC 
4 c. very thinly sliced carrots
1/2 tsp. dried basil leaves
1/2 tsp. salt
Dash of pepper
1/4 c. water
2 tbsp. butter

Place carrots in 1 1/2 quart casserole. Sprinkle with basil, salt and pepper, toss together. Add water and dot with butter, cover and bake at 350 degrees for 65 to 70 minutes until tender. Calories 1 serving = 61.
