CHEESECAKE CUPCAKES 
2 (8 oz.) pkgs. cream cheese, softened
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
Vanilla wafers
Pie filling for topping

Beat first 5 ingredients together until fluffy. Put vanilla wafer in bottom of lined cupcake tin. Fill 2/3 full of cream cheese mixture. Bake at 375 degrees for 15-20 minutes. Cool and top with favorite pie filling (we like cherry and blueberry best!). Makes 18-20 cupcakes. Preparation time: 20 minutes.
