ZUCCHINI BREAD 
2 c. grated zucchini
1 c. walnuts
3 eggs
2 c. sugar
1 c. corn oil
2 c. flour
1 tbsp. cinnamon
2 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
1 tsp. vanilla

Beat eggs; add sugar and oil and vanilla. Mix sifted ingredients and zucchini. Bake at 350 degrees for 1 hour. Yields 2 loaves.
