IRISH DESSERT SODA BREAD 
3 1/4 c. sifted cake flour
1 tbsp. baking soda
1/2 tsp. salt
1 c. raisins
1/3 c. sugar
1 tbsp. caraway seeds
1 c. plus 2 tbsp. skim milk
Vegetable cooking spray

Combine first 6 ingredients in a large bowl; stir well. Add milk; stir well. Spoon batter into an 8-inch round cake pan coated with cooking spray. Bake at 375 degrees for 28 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes; remove from pan. Cool on wire rack; cut into wedges. Yield: 12 servings.
