AUNT KAY'S IRISH SODA BREAD | |
2 1/2 c. flour 1/2 c. sugar 3/4 c. raisins 1 tsp. vanilla 2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. caraway seeds (optional) 1/4 lb. butter 1 egg 1/2 c. sour cream Evaporated milk Put first 7 ingredients into bowl. Mix in softened butter and 1/2 cup sour cream. Add evaporated milk until you have a nice dough. Turn out on floured board and knead for 5 minutes. Aunt Kay bakes hers in the black iron frying pan, well greased and dusted with flour for 3/4 hour or more at 375 degrees. My family of Hoosiers likes this without caraway seeds. Follow Irish tradition and put an "X" on the top before baking. I also sprinkle with sugar. |
