BROWN IRISH SODA BREAD | |
2 1/3 cups whole wheat flour 2/3 cup white flour 1/2 tsp. salt 3/4 tsp. baking soda 8 oz. buttermilk (and maybe a little more) 2 oz. unsalted butter Mix all dry ingredients together, rub in the butter. Make into a very wet dough with buttermilk or well soured milk. Knead lightly. Put in a greased 7-inch cake tin. Make a cross on top with a floured knife. Cover with a lid and bake in a 375-400°F oven for about 30-45 minutes. Dark, crumbly and delicious. (You can sour milk by adding 2 Tbl of lemon juice to a cup of milk. Let sit for 2 minutes.) |
