CALCUTTA BEEF | |
1 1/2 lbs. ground beef 3 tbsp. butter 2 onions, sliced 1 tsp. garlic salt 1 tsp. salt 1/4 tsp. pepper 1 lg. can whole tomatoes 1 tart apple, chopped 1 tbsp. green pepper, chopped 2 c. chicken stock 3 tbsp. curry powder 1 tbsp. flour 1/2 c. cooked peas Melt butter in large skillet. Saute onions and add beef, garlic salt, salt and pepper. Brown. Add can of tomatoes (including liquid), chopped apple and green pepper and chicken stock. Mix curry powder and flour together in small bowl and stir into the mixture. Simmer on top of stove or transfer to baking dish and bake for 30 minutes in 350 degree oven. Serve over white rice, accompanied by the following condiments: shredded coconut, chutney (Major Gray's or Chutnut), raisins, cocktail peanuts, watermelon pickles. An easy yet festive "Meal in a Dish" that is a crowd pleaser! Servings: 6-8 (triple recipe for a crowd). |
