QUICK BEEF STROGANOFF 
3 lbs. beef, cubed
1/4 c. shortening
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. ground ginger
1/2 tsp. curry powder
3 c. sour cream
2 pkgs. onion soup mix

Brown beef in fat until all sides are evenly browned. Add seasonings. Cover; simmer until meat is about half tender. Combine sour cream with onion soup mix. Blend half of this mixture with meat and juices in the pan. Place in an oiled 2 quart casserole and cover with remaining sour cream mixture. Bake at 325 degrees for 1 hour or until tender.
