BROCHETTES OF PORK WITH HERBS 
1 1/2 lbs. boneless lean pork loin, cut into 1-inch cubes
1/4 c. fresh lemon juice
1 tbsp. minced garlic
4 sprigs fresh thyme, or 1 tsp. dried thyme
1 bay leaf, crushed
10 fresh basil leaves, or 1 tbsp. dried basil
2 tbsp. chopped Italian parsley leaves
1 tbsp. grated lemon rind
2 tbsp. red wine vinegar
1 tbsp. olive oil
Freshly ground black pepper (8 turns of the pepper mill)
1/2 tsp. salt

1. Combine the meat and all the ingredients in a mixing bowl. Blend well. Cover with plastic wrap and refrigerate to marinate for 4 hours at least (the longer the better).

2. Drain the meat and arrange equal portions on each of 6 skewers.

3. Preheat a charcoal grill or oven broiler and grill for 15 minutes, or until the pork is cooked, turn the pork often.
