ANGEL FOOD PIE 
4 1/2 tbsp. cornstarch
3/4 c. sugar
1 1/2 c. boiling water
1/2 tsp. salt
3 egg whites
3 tbsp. sugar
1/2 tsp. vanilla
1 tsp. almond extract
1 (9 inch) baked pie shell
Cool Whip or whipped cream for top

Mix cornstarch and sugar in a sauce pan. Add boiling water. Stir constantly and cook until thick and clear. Add salt to egg whites and beat until stiff. Add 3 tablespoons of sugar, vanilla and almond extracts, beating until creamy. Pour the hot cornstarch mixture slowly over the beaten egg whites, beating continuously. Cool slightly, then pour into baked pie shell. Top with Cool Whip or whipped cream. Sprinkle a few chopped walnuts over the top, if you desire. Refrigerate until ready to serve.
