ANGEL PIE 
4 egg whites
1 c. sugar
1/4 tsp. cream of tartar

FILLING:

4 egg yolks
1/2 c. sugar
3 tbsp. lemon juice
1 tbsp. lemon rind
Salt
1 c. whipped cream

Beat egg whites until stiff. Add 1 cup sugar and cream of tartar. Bake in 9 inch pan at 275 degrees for 1 hour.

In a double boiler cook filling ingredients until custard consistency. Cool. Fold in 1 cup of whipped cream.
