BAKED FLOUNDER VINAIGRETTE 
1 pkg. (12 oz.) Gorton's Fishmarket Fresh frozen flounder fillets
Paprika
Salt to taste
3 or 4 tomato slices, each 1/2 to 3/4 inch thick
1 tsp. snipped chives or chopped green onion
1/4 tsp. dried tarragon leaves
1/4 c. Italian salad dressing
1/4 c. Cheddar cheese, shredded
1 tsp. snipped parsley

Heat oven to 475 degrees. Arrange frozen fillets in ungreased rectangular baking dish, 13 x 9 x 2 inches. Sprinkle with paprika and salt. Place 1 tomato slice on each fillet; sprinkle with chives and tarragon. Pour dressing over fillets; sprinkle with cheese. Bake uncovered until fillets flake easily with fork, about 20 minutes. Sprinkle with parsley. 4 servings.

For One Serving: Use 1 fillet, dash of paprika, salt to taste, 1 tomato slice, 1/4 teaspoon chives, 1/8 teaspoon tarragon, 1 tablespoon salad dressing, 1 tablespoon cheese and 1/4 teaspoon parsley. Prepare as directed except-bake 10 minutes.
