APRICOT CHICKEN - OVEN B.B.Q. 
2 chicken fryers (skin & fat removed)
1 lg. onion, sliced
1/4 c. brown sugar
1/4 c. wine vinegar
8 oz. can tomato sauce
3-4 oz. water
Dash of chili pepper
8 oz. jar apricot or apricot-pineapple preserves

Place chicken in a single layer in baking dish. Cover with following sauce and bake at 300 degrees uncovered, for 1 1/2 hours or 350 degrees for 1 hour.

Sauce: Brown onion in vegetable oil. Add brown sugar, vinegar, tomato sauce, water and chili pepper. Simmer. If you like the sauce more spicy you can use 1-2 jars of chili sauce instead of the tomato sauce and chili pepper. Simmer for 15 minutes. Pour sauce over chicken parts. On top of sauce, spoon over the preserves. Bake as directed. Freezes beautifully.
