CURRIED POTATO SALAD | |
1 c. sour cream 1 c. mayonnaise 1/4 c. sweet pickle relish 1 tbsp. curry powder 1/2 tsp. salt Pepper to taste 2 lbs. potatoes, freshly cooked, drained, peeled & cut into 3/4 inch chunks 2 med.-size red apples, cut into 1/2 inch chunks 3/4 c. raisins Mix sour cream and mayonnaise in a large bowl until smooth. Stir in pickle relish, curry powder, salt and pepper. Add potatoes, apple chunks, and raisins; toss to coat. Cover and chill at least 2 hours or refrigerate up to 3 days. Makes 10 servings. |
