MERINGUE SNACK MIX 
3 c. miniature saltine crackers
1 1/2 c. pecan halves
3 egg whites
1 c. sugar
1 tsp. vanilla

Preheat oven to 300 degrees. In a bowl mix pecans and crackers. In a separate bowl beat egg whites until stiff. Add sugar and vanilla, mixing well. Fold mixture into crackers and pecans, stirring to coat completely.

Spread mixture on a well buttered baking sheet. Bake 20 minutes, stirring after 10 minutes. Spread mix on waxed paper to cool. Break into pieces and store in airtight container.
