ZUCCHINI SQUASH CAKE 
3 c. sugar
1 1/2 c. oil
4 eggs
3 c. grated zucchini
3 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 1/2 tsp. cinnamon
1 tsp. baking soda
1 c. raisins or nuts

Beat the first 3 ingredients together then add rest of ingredients. Bake at 325 degrees for 1 1/2 hours.

ICING:

3 oz. cream cheese
1 tsp. vanilla
1 stick butter
1 1/2 c. powdered sugar

You can freeze up to 6 months.
