PINEAPPLE ZUCCHINI CAKE 
1 c. oil
3 eggs
2 c. sugar
2 tsp. vanilla
2 c. zucchini, peeled, grated and drained
3 c. flour
1 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
1/2 c. raisins
1 c. nuts, chopped
1 c. pineapple, crushed and drained

Beat until fluffy the eggs, sugar, vanilla and oil. Add the zucchini, then the flour, baking powder, salt and soda. Stir in the pineapple, raisins and nuts. Mix well. Bake in 2 greased and floured loaf pans for 1 hour at 325 degrees. Bakers Joy or Pam is okay for greasing pans.
