BLUEBERRY COLESLAW 
This is excellent!

2 lb. (900 g.) red cabbage, thinly sliced
1/3 cup (75 ml.) blueberry or cider vinegar
2/3 cup (150 ml.) granulated sugar
1 tsp. salt
1 cup (250 ml.) whipping cream
1 cup (250 ml.) blueberries (fresh or frozen)

Place cabbage in a large bowl. Whisk together vinegar, sugar, salt and whipping cream. Add to the cabbage and mix well. Gently fold in blueberries.

Enjoy!

Makes 6 servings.
