GREEN RICE CASSEROLE 
2 c. cooked rice
2 c. grated cheddar cheese
1/4 c. butter, melted
3 beaten egg yolks
3 stiffly beaten egg whites
10 oz. pkg. frozen chopped spinach, thawed & drained
2 tbsp. minced onion
1 tsp. salt
1/2 tsp. pepper

Combine all ingredients except egg whites and 1 cup cheddar cheese. Blend thoroughly. Gently fold in egg whites. Pour mixture into greased 2 1/2 to 3 quart baking dish. Sprinkle remaining cheese on top. Bake uncovered at 350 degrees for 25 minutes. Serves 6 to 8.
