HAM FRITTA 
4 eggs
1/2 c. biscuit baking mix
1/2 c. milk
1 tsp. Worcestershire sauce
1/2 tsp. garlic salt
1/2 tsp. cayenne red pepper
2 med. zucchini, chopped (about 2 c.)
2 med. tomatoes, chopped (about 1 1/2 c.)
1 sm. onion, chopped
1 c. cut up ham
1 c. shredded cheddar cheese (about 4 oz.)

Heat oven to 325 degrees. Beat eggs slightly, beat in baking mix, milk, salt, Worcestershire sauce, garlic salt and red pepper. Layer zucchini, tomatoes, onion and ham in ungreased baking dish, 8"x8". Pour egg mixture on top. Sprinkle with cheese. Bake uncovered until knife inserted 1" from edge comes out clean, 40 to 50 minutes. Let stand 10 minutes before serving. 6 to 9 servings.

This was a great recipe. I used spinach instead of zucchini and used half and half. I would do this again.
