APPLE COFFEECAKE 
3 c. flour
2 1/2 c. granulated sugar
1 tbsp. baking powder
1 1/2 tsp. salt
4 med. apples
2 tsp. cinnamon
5 tbsp. packed brown sugar
4 eggs, beaten
1 c. corn oil
1/2 c. orange juice
3/4 c. chopped nuts

Sift together flour, granulated sugar, baking powder and salt. Slice apples thinly and set aside.

Mix together cinnamon and brown sugar and set aside. Place eggs, oil and orange juice in mixing bowl. Add flour mixture to make batter.

Grease a tube pan. Place a layer of apples in the tube pan, then cinnamon-sugar and nuts, then cake batter, using half of each. Repeat. Bake at 350 degrees 1 1/4 hours or until done. Cool and remove from pan. Drizzle with a confectioners' sugar icing, if desired.
