MOM'S ZUCCHINI SUPREME 
2 bunches green onions, sliced
6 med. zucchini, sliced with skin
1 tbsp. butter
2 lb. lean ground beef, browned and drained
1 (#2 1/2) can tomatoes
2 cans tomato sauce, small
1 to 2 tsp. salt
Pepper to taste
2 tbsp. sugar
1/8 tsp. oregano
1 to 2 bay leaves
1 tbsp. chili powder
1 to 2 tsp. green or red pepper flakes
Hot cooked white rice

In large fry pan brown and drain ground beef. In smaller pan saute zucchini and green onion in butter. Add to ground beef. Add chopped canned tomatoes, tomato sauce and spices to taste. Simmer on low, about 45 minutes until it begins to reduce, and flavors mingle.

Meanwhile prepare white rice for 6 to 8 servings. Mix together some cornstarch and 2 cups water. Add to the zucchini beef mixture to thicken. Serve on the cooked rice. Also good on baked potatoes or mashed potatoes, noodles or whatever. This is my mother's recipe, Estellean Weiers.
