PORCUPINE MEATBALLS 
1 c. uncooked rice
2 lbs. ground beef
1 med. onion, diced fine
1 egg
1 tsp. salt
Pepper to taste
Sugar to taste
1 lg. can tomato juice

Rinse rice, cover with cold water and let soak for 1 hour. Drain well. Combine rice, ground beef, onion, egg, salt, pepper and sugar. Mix until well blended. Shape into balls. Brown in skillet on all sides. Place balls in baking pan. Cover with tomato juice. Bake 1 hour and 30 minutes at 350 degrees
