BEST BANANA MUFFINS 
4 lg. bananas
2 c. sugar
2 lg. eggs
3 c. flour
1 c. chopped nuts
2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
2/3 c. oil

Mash bananas in large mixing bowl. Beat in eggs and sugar. Sift dry ingredients together in bowl. Add to banana mixture alternately with oil but do not overbeat (use spoon not mixer). Fold in nuts quickly. Fill 2 1/2 inch greased muffin pans 2/3 full. Bake at 375 degrees for 25 to 30 minutes or until done. Serve warm with butter. Makes 1 1/2 dozen.

Recipe is okay but baking time way off. I set my oven between 350 and 375°F and in 18 minutes they were over done.

Thanks for the heads up on the time. In my oven, I used 375°F and kept it to 18 minutes and checked to see if they were done using the toothpick-in-the-middle method. They were perfectly baked.

I have baked banana bread for years and I must say this is
the best. I watch my muffins closely after they start baking. After they come out of the oven I place on a plate, cover with tin foil, the steam makes them moist and yummy. When cooled I wrap each one, place them in a pretty bowl next to the coffee pot and watch them vanish! Thanks
