PUMPKIN CAKE | |
2 c. sugar 2 c. flour 2 c. pumpkin (1 lb. can) 1 c. corn oil 4 eggs 1/2 tsp. salt 2 tsp. cinnamon 2 tsp. baking powder 2 tsp. baking soda 1 c. walnuts or pecans 1 lb. box 4x confectioners sugar 8 oz. cream cheese 1/2 c. butter 2 tsp. vanilla In a large bowl, place sugar, flour, pumpkin, oil, eggs, salt, cinnamon, baking powder and soda; beat for 3 minutes. Bake in greased and floured 13 x 9 inch pan for 45 minutes in a 325°F oven. For frosting, cream the cream cheese and butter on high speed. Add sugar and beat until creamy and add vanilla. Frost cake while still warm. |
