ROQUEFORT BAKED POTATOES 
6 baking potatoes
4 oz. Roquefort cheese, crumbled
1 c. sour cream
1 tbsp. chopped parsley

Scrub potatoes, and rub with butter before baking. Bake at 400 degrees for 1 hour or until tender. Combine remaining ingredients and blend until smooth. Remove potatoes from oven and cut lengthwise and cross wise slits in the top of each potato. Press potato to spread opening. Fill with dressing. Place under broiler until dressing melts and potatoes are hot. Watch carefully. NOTE: Wonderful with steak and salad.
