PINEAPPLE-RICE MALLOW 
2 c. cooked converted rice
1 c. water
1 c. pineapple juice, drained (canned in extra heavy syrup)
1/2 lb. marshmallows
1 1/2 - 2 c. canned pineapple tidbits & maraschino cherries, cut & well drained
Juice of 1/2 lemon
1 c. (1/2 pt.) heavy cream, whipped

Combine rice, water in 1/2 cup of pineapple juice in a pan large enough to allow for some "foaming". Bring to boil; then cover, lower heat and simmer until most of the liquid is absorbed. Remove from heat and add 1/2 cup pineapple juice and marshmallows, folding only until marshmallows are half melted. Chill and cool until partially set. Then fold in fruit, lemon juice and whipped cream. Pile mixture into large bowl and chill at least 3 hours or until set. Garnish with sliced fruit or berries, or grated coconut or with toasted almonds.
