BLUEBERRY MUFFINS 
3/4 c. skim ilk
1/4 c. safflower oil
1 egg
1 1/2 c. flour, unbleached
1/2 c. wheat flour
1/4 c. sugar
3 pkgs. Sweet 'N Low
3 tsp. baking powder
1 tsp. salt
1 c. fresh or frozen blueberries or blackberries

Heat oven to 400 degrees. Spray muffin tins with Pam. Beat milk, oil and egg. Stir in flour, sugar, baking powder and salt all at once, just until flour is moistened (batter will be lumpy). Fold in blueberries or blackberries.

Divide batter among muffin tins. Sprinkle with sugar, if desired, I don't. Bake until golden brown 18 to 20 minutes. Immediately remove from pan. Yield 1 dozen muffins.
