STUFFED PEPPERS 
4 med. peppers
1 lb. ground beef
2 c. cooked rice
1/4 c. diced onion
1 1/2 tsp. salt
1/8 tsp. pepper
2 (8 oz.) cans tomato sauce
1 c. shredded cheese

Wash peppers and cut tops out and clean inside out. Mix beef, rice, onion, salt, pepper and 1/2 cup tomato sauce. Pile into peppers. Top with cheese. Arrange in shallow baking dish. Pour remaining tomato sauce over peppers. Bake at 350 degrees for 1 hour.
