JAZZY JAMBALAYA (HOT!) | |
6 oz. hot smoked sausage, sliced 1/4" thick 2 cans tomatoes, crushed 8 oz. med. shrimp, shelled & deveined 1 c. uncooked rice 1 bay leaf 1 garlic clove, minced 1 tbsp. chopped parsley 1 tsp. chili powder 1 tsp. crushed red peppers Brown sausage over low heat. Crush tomatoes, keep liquid. Add water to liquid to 1 1/2 cups. Add to sausage with tomatoes. Add shrimp and remaining ingredients. Bring to a boil. Stir. Reduce heat and simmer 30-35 minutes or until most of the liquid is absorbed. Remove bay leaf and serve. For a less spicy dish cut chili powder in half and delete red peppers. |
