1/2 pkg. Nabisco chocolate wafers (or Oreos - 20) double cookies 1/2 stick butter, melted 1/2 gal. coffee ice cream, softened (Scraped clean of filling by your helpful child). FUDGE SAUCE: This sauce is great! - I make enough to have leftovers for ice cream. 3 c. sugar 1 1/2 c. cocoa 1 pt. heavy or whipping cream 1 1/2 sticks butter 1 tsp. vanilla Prepare fudge sauce ahead in a heavy saucepan over medium heat, cook sugar, cocoa, cream and butter until mixture is smooth and boils, stirring constantly. Remove from heat, stir in vanilla and cool in refrigerator to spreading consistency. PIE: Crush wafers, add butter, mix well and press into 9 inch pie pan. Chill 15 minutes. Mound softened ice cream in crust. Freeze until firm. Spread fudge sauce (1 1/2-2 cups) over ice cream. Freeze until ready to serve. Serve with dollop of whipped cream topped with toasted almonds. |
