ANGEL PIE 
CRUST:

1 c. flour
3 tbsp. sugar
6 tbsp. butter

FILLING:

1 c. hot water
3/4 c. sugar
3 tbsp. cornstarch
1 lemon, rind & juice
3 egg whites, beaten
1/4 tsp. salt

TOPPING:

1/3 c. whipping cream
1/2 c. crushed peanut brittle

Crumble crust and pat in bottom of pan. Bake at 350 degrees for 10 to 15 minutes.

Boil filling and when cool, add beaten egg whites. Spread over cooled crust.

Before serving, top with whipped cream and sprinkle with crushed peanut brittle.
