COCONUT FLUFF PIE 
1 tbsp. Knox gelatin
1 c. cold water
3 egg yolks
1/4 c. sugar
1 c. milk
1/8 tsp. salt
3 egg whites
1/4 c. sugar
1/4 c. coconut
1 tsp. vanilla
1/3 c. toasted coconut

Soak gelatin in water. Heat milk in double boiler. Beat egg yolks and 1/4 cup sugar together, stir into hot milk. Add salt and cook to the consistency of custard. Add softened gelatin and cook until dissolved. Add coconut and vanilla. Cool.

When mixture begins to set, beat egg whites and add 1/4 cup sugar until stiff. Fold into cooked mixture. Pour into baked pie shell. Cover with toasted coconut. Place in refrigerator to set.
