LEMON BEANS & MUSHROOMS | |
1 1/2 lb. green beans, washed & trimmed 2 tbsp. butter 1/2 lb. mushrooms, cleaned & sliced 1 rind & juice of a lemon Salt & pepper Place beans in boiling, salted water; cook 10 minutes. Cool beans under cold water, drain and set aside. Saute mushrooms in a pan for 2 to 3 minutes over high heat. Season with salt and pepper; mix well. Cook 2 more minutes. Add beans, lemon rind and juice; cover and cook 3 more minutes. Serves 4. |
