LIGHTLY STUFFED POTATOES 
2 baking potatoes, scrubbed
1 c. lowfat cottage cheese
1/4 c. freshly grated Parmesan cheese
2 oz. Mozzarella cheese, shredded (about 1/2 cup)
2 tbsp. fresh parsley, chopped
2 tbsp. fresh dill, chopped
Freshly ground pepper to taste

Bake potatoes at 350 degrees for 1 hour or until tender. Cut potatoes in half lengthwise. Carefully scoop potatoes out of skin, leaving 1/4 inch shell. Add remaining ingredients to potato; mix well. Spoon back into skins. Bake for 15 minutes or until lightly browned. Don't forget to eat the skins for extra fiber. 4 servings.
