SWEET AND SOUR CHICKEN 
2 broiler fryer chickens, cut up
1/4 c. vegetable oil
1 (8 oz.) Russian dressing (red type)
1 env. dry onion soup mix
1 (10 oz.) jar apricot preserves

Mix all ingredients, except chicken. Place chicken, skin side up, in a single layer in a large shallow pan. Pour preserve mix over chicken. Bake at 350 degrees for about 1 hour or until tender. Baste occasionally with pan drippings. Serves 8.
