2 c. sugar 2 sticks butter 4 eggs 1 1/2 c. self rising flour 2 tsp. vanilla 1 lb. chopped dates 2 sm. cans Bakers coconut 3 1/2 c. chopped pecans Heat oven to 325 degrees. Grease cookie sheet (15x10) well, including sides. Beat eggs just until fluffy, add butter and sugar and vanilla. Slowly add flour. Still beating or "folding in" add dates, then coconut and last pecans (gets a little thick and hard to stir, but stick in there). Pour cookie mixture in pan and even out to sides and corners. Bake approximately 45 minutes until crusty on top, do not overbake or cookies will be dry. |
