SWEET AND SOUR PORK, CHICKEN OR
TOFU
 
1-2 lbs. lean boneless pork or chicken or 1 block tofu, cut in strips
2 tbsp. shortening
1 or 2 chicken bouillon cubes
1 c. water
1 (1 lb. 4 1/2 oz.) can pineapple chunks
1/4 c. brown sugar
2 tbsp. cornstarch
1/4 c. vinegar
1 tbsp. soy sauce
1 med. green pepper, cut in strips
1 med. onion, sliced thin
Hot cooked rice
1 can chow mein noodles

Brown meat in large frying pan or Dutch oven with shortening. Add water, bouillon and 1/4 teaspoon salt. Mix well. Cover and simmer for 1 hour.

Meanwhile, drain juice from pineapple and combine with brown sugar, cornstarch, vinegar, soy sauce and 1/2 teaspoon salt. Cook over medium heat, stirring frequently until thick. Add to meat mixture along with pineapple chunks, green pepper and onion. Mix and heat 2 or 3 minutes. Serve over rice and chow mein noodles.
