LEMON DELIGHTS 
PASTRY BASE:

1/2 lb. butter
1/2 c. 10x sugar
1/2 tsp. salt
2 c. flour

Preheat oven to 350 degrees. Grease pan slightly. Blend butter and sugar. Add salt and flour, 1 cup at a time until dough is soft and crumbly. Pat in a pan, 13 1/2 x 9 1/2 inches or 2 (9 inch) pans. Bake 15 to 30 minutes at 350 degrees. Remove from oven and cool.

FILLING:

Rind of 1 lemon (approx. 4 tsp.)
1 1/2 c. sugar
4 tbsp. flour
1 tsp. baking powder
Pinch of salt
1/4 to 1/2 c. lemon juice
4 eggs

Mix lemon rind and sugar. Add flour and baking powder, salt and lemon juice and blend. Add eggs, 1 at a time and blend each time. Pour over pastry base and bake 25 to 30 minutes until set. Sprinkle with 10x sugar when cool.
