PINEAPPLE COOKIES 
1 1/2 c. butter
1 1/2 c. sugar
1 1/4 c. brown sugar
1 1/2 c. crushed, drained pineapple
3 beaten eggs
1 1/2 tsp. vanilla
6 c. sifted flour
1 tbsp. baking powder
3/4 tsp. baking soda
1 1/2 tsp. salt
1 1/2 c. walnuts (optional)

Cream sugar and butter until smooth; add pineapple, then eggs and vanilla. Mix sifted flour with soda, baking powder, and salt (save some flour for dusting nuts). Add flour slowly to creamed mixture; mix well, adding nuts if desired. Chill dough in refrigerator. Drop by spoonfuls onto buttered (butter) cookie sheet. Bake for 12 minutes at 350 degrees until lightly browned on top.
